Type 1 Exhaust Hoods

All commercial kitchens need a properly designed restaurant ventilation system. A canopy exhaust vent hood is part of that system. There are two main categories of commercial vent hoods: Type 1 hoods and Type 2 hoods. Type 1 hoods are used with cooking applications that produce smoke or grease vapors. Type 2 hoods are used for exhausting heat and condensation only.

Type 1 exhaust hoods are also called grease extraction hoods. Type 1 hoods are required to be installed over cooking appliances that create smoke and grease by-products. Type 1 hood is ideal for use with fryers, woks, grills, and open-flame cooktops.

A restaurant exhaust fan pulls air up into the Type 1 exhaust hood and the hood captures and contains grease and smoke particulates with the help of a bay of baffle grease filters. The contaminated air then continues through the ductwork until it is exhausted to the outdoors.

Exhausting this hot, humid, and contaminated air from the kitchen makes the environment much more comfortable for those who are working in the kitchen. Type 1 exhaust hoods also help make sure your kitchen is safer by reducing the risk of a grease fire developing in your ductwork. That’s why NFPA 96 Standards require Type 1 exhaust hoods to capture and remove grease-laden vapors before they can build up in your ductwork.

Type 1 exhaust hoods also help keep your roof cleaner by reducing the amount of grease effluent that might be able to escape from your rooftop ventilator. Keeping grease from running off onto your roof is important because grease buildup is highly flammable and it can also be damaging to your roof surface.

With enough grease and oil build-up, the underlying structure of your roof can also become damaged. This results not only in a fire risk but in potentially costly roof repairs. By installing a Type 1 exhaust hood, you can save yourself both money and time you might lose if your restaurant has to shut down for repairs.

So if your kitchen is producing any grease or smoke, you’ll need to invest in a Type 1 hood as well as baffle filters to contain the grease and oil vapors.
