Exhaust Hoods

Restaurant exhaust hoods have several important jobs to do in your commercial kitchen. Exactly what jobs it does depends on the type of hood it is. There are two types of commercial kitchen exhaust hoods: Type 1 hoods and Type 2 hoods. It is crucial to the safety of your kitchen to know which type of restaurant exhaust hood you need.

Type 1 commercial exhaust hoods are for use with cooking that produce smoke and grease. This includes woks, fryers, and solid fuel cooking. This type of restaurant exhaust hood captures and contains smoke, grease vapors and oil effluent along with any heat and moisture. Reducing heat and moisture in the kitchen makes the environment more comfortable for the kitchen but can also make a big improvement on the air quality of the dining areas.

This type of exhaust hood uses a bay of grease baffle hood filters to help keep tiny grease particles from entering the rest of the ventilation system and ductwork. Type 1 exhaust hoods are required over any cooking surface that produces grease or smoke by the NFPA 96 Standard as well as local ordinances and many insurance companies and landlords.

These exhaust hoods are also required to be routinely cleaned of any grease or oil buildup. By keeping your Type 1 commercial exhaust hood clean, you not only avoid potential fines, you reduce the risk of a fire in your restaurant. In addition to cleaning the hood on a regular basis, you must also clean the exhaust hood grease filters.

How often you need to perform cleanings depends greatly on the type and frequency of the cooking done. Solid fuel cooking appliances, wood burning stoves, woks, charbroilers, and fryers will all require much more frequent cleaning of your exhaust hoods.

The other type of commercial exhaust hood is the Type 2 hood. Type 2 hoods do not utilize a bay of hood filters. They are designed only to exhaust heat and moisture from your kitchen. They are required for installation over kitchen appliances such as dishwashers and steam tables as well as some types of pizza ovens. Type 2 exhaust hoods are easier to clean and do not significantly reduce your risk of fire, but they are no less important to your kitchen’s ventilation system.

Type 2 hoods exhaust hot, humid. The effect they have on the air quality in the kitchen is so pronounced that it does not take long for guests in the dining area to notice when your Type 2 restaurant exhaust hood stops working.

And if the comfort of your staff and patrons wasn’t enough, the same hot, humid air can wreak havoc on expensive kitchen equipment and food stored in the pantry, causing premature rotting of gaskets and leading to early food spoilage.
