A single-phase exhaust fan motor will draw significantly more current than the three-phase but still only deliver the same amount of power. Three-phase exhaust fan motors are much more efficient and are more commonly used for commercial and industrial applications that require heavy power loads, such as kitchen ventilation systems.

In the U.S., most commercial buildings and industrial facilities use three-phase power because a three-phase system offers 1.732 times more power from the same current than a single-phase power system does. Three-phase hood fan motors also allow for smaller, less expensive wiring, making them safer and less expensive to run.

To visualize the difference between single-phase power and three-phase power, imagine a canoe rowing through water. A single person rowing the canoe is powering the canoe forward whenever the paddle strokes through the water and every time the paddle lifts out of the water to prepare for the next stroke, the power acting on the canoe goes to zero. This is single phase power. Now imagine that same canoe with three people rowing at the same time. Their strokes are moving in synchronization, but are each separated by 1/3 of a stroke, so there is always one paddle powering the canoe in the water. The canoe is receiving consistent and constant power at all times; this is like three-phase power in a restaurant exhaust fan motor.

Single-phase kitchen exhaust fan motors cannot be converted to three-phase motors, and similarly, three-phase exhaust fan motors cannot be converted to single-phase motors. If you need to change from a single-phase motor to a three-phase motor or vice-versa, the kitchen exhaust fan motor must be completely replaced.

All restaurant exhaust fan motors are suitable for high and low voltage applications. Single phase motors are rated 115/208-230; the low voltage is 115 and the high voltage is 208-230. Three phase exhaust fan motors are rated 203-230/460; where 203-230 is the low voltage and 460 is the high voltage.
